Bacon egg muffins
Breakfast • Eggs • up to 30 min • Oven • Airfryer
Sugar-free • Gluten-free
Ingredients:
* Eggs – 2 pcs. (120 g)
* Bacon – 2 slices (40 g)
* Fresh spinach – a handful (30 g)
* Butter – 1 teaspoon (5 g)
* Salt – to taste
* Pepper – to taste
PREPARATION – OVEN:
* Cut the bacon into small pieces.
* Fry the bacon in a dry pan until the fat is rendered.
* Add the spinach and fry 1-2 minutes, until wilted.
* In a bowl, beat the eggs with salt and pepper.
* Grease silicone muffin cups with butter.
* Place the bacon and spinach in the muffin cups.
* Pour the egg mixture over the muffins.
* Bake at 180°C for 15 minutes, until the muffins are set.
PREPARATION - AIRFRYER:
* Prepare the muffins as above.
* Bake at 180°C for 12 minutes in silicone muffin cups.
* Check the center for set before removing.
