INGREDIENTS:
* Aubergine – 1 medium (300 g)
* Feta cheese – 60 g
* Olive oil – 1 tablespoon (15 ml)
* Garlic – 1 clove
* Fresh herbs (oregano/thyme) – to taste
* Salt, pepper – to taste
PREPARATION – OVEN:
* Cut the aubergine in half lengthways and score the flesh.
* Brush with olive oil and crushed garlic.
* Season with salt and pepper.
* Bake at 200°C for 20–25 minutes until tender.
* Crumble feta over the top and return to oven for 5 minutes.
* Garnish with fresh herbs and serve.
