Ingredients:

  • Eggs – 2 pcs. (120 g)

  • Avocado – 1/2 pc. (120 g)

  • Arugula – a handful (20 g)

  • Olive oil – 1 teaspoon (5 ml)

  • Salt – to taste

  • Pepper – to taste

PREPARATION – FRYING PAN:

  • Heat a frying pan with olive oil.

  • Crack the eggs into the pan.

  • Fry over low heat until desired doneness.

  • Slice the avocado.

  • Arrange the arugula and avocado on a plate.

  • Add the eggs and season with salt and pepper.
