Ingredients:

* Arugula – a handful (20 g)
* Parmesan – 1 tablespoon (15 g)
* Butter – 1 teaspoon (5 g)
* Salt – to taste
* Pepper – to taste
PREPARATION – FRYING PAN:
* Heat the frying pan and add the butter.
* Crack the eggs and fry until the desired degree of white set.
* Place the eggs on a plate. arugula.
* Transfer the eggs to the arugula.
* Sprinkle with Parmesan cheese and season with salt and pepper.
